Watchers are troublesome enemies despite seemingly mediocre stats. They can inflict a wide array of status effects through their various abilities (especially Evil Eyes), and if you allow them to charge up through Focus then Doom Bolt is capable of dealing a lot of damage. They are fairly weak to physical attacks as well as Wind damage, though their higher evasion rate may allow them to survive longer than expected sometimes.
